چکیده

In 2003 the Department of Health of South Africa embarked on a mandatory fortification programme of maize meal as part of a nutrition program to alleviate malnutrition. The aim of this study was to determine the vitamin A content in fortified white maize meal and the maize porridge prepared with it as purchased and consumed. The highest mean vitamin A concentration in the maize meal was 261 μgRE/100g and the lowest mean vitamin A concentration was <19 μgRE/100g. Pertaining to regulation the final minimum level of vitamin A in fortified maize meal shall not be less than 187.7 μg/100g (Foodstuffs, Cosmetics and Disinfectants Act, 2003). The average retention of vitamin A in maize porridge as the difference in vitamin A concentration between raw maize meal and cooked porridge was calculated as 39.8%. Although fortification of maize meal can improve the vitamin A intake of the population, it must be regularly monitored and regulate in order to be beneficial. If not then fortification might as well be voluntary.

Effect of different maize meal diets on growth and vitamin A: case-study on chickens.

South Africa embarked on mandatory vitamin and mineral fortification of wheat flour and maize meal in 2003 as part of a multi-faceted approach to alleviate malnutrition. However, it was reported, in 2008, that vitamin A deficiency increased despite the mandatory fortification programme. This motivates an investigation into the absorption of vitamin A as fortificant in the maize meal. Relative a...

The effect of retinyl palmitate added to iron-fortified maize porridge on erythrocyte incorporation of iron in African children with vitamin A deficiency.

Retinyl palmitate added to Fe-fortified maize bread has been reported to enhance Fe absorption in adult Venezuelan subjects but not in Western Europeans. It is not known to what extent these results were influenced by differences in vitamin A status of the study subjects. The objective of the present study was to evaluate the influence of retinyl palmitate added to Fe-fortified maize porridge o...

Studies on the fortification of cane sugar with iron and ascorbic acid.

1. The feasibility of improving iron nutrition by fortifying cane sugar with Fe and ascorbic acid was studied. 2. It was found to be possible to add a number of Fe salts together with ascorbic acid to sugar without affecting its appearance or storage properties. 3. The absorption of Fe from fortified sugar eaten with maize-meal porridge or made into jam or biscuits was measured in ninety-four v...

Iron absorption from ferrous bisglycinate and ferric trisglycinate in whole maize is regulated by iron status.

BACKGROUND There is a need to determine whether iron absorption from iron amino acid chelates is protected from inhibition by dietary phytate and regulated normally by iron status. OBJECTIVE The objective of this study was to compare iron absorption from ferrous sulfate, ferrous bisglycinate, and ferric trisglycinate in whole-maize meal; to determine whether iron from ferrous bisglycinate and...
